you either love them or hate them. i am a lover...my husband not so much. a few weeks ago we ordered dinner while working on several apartment projects. i got a beet salad for us to share. it was mixed greens with roasted beets, toasted pistachios, and goat cheese all tossed in a simple balsamic vinaigrette. it was the most delicious salad i have had in a long time, and my husband loved it too!!

it reminded me of the salad my sister-in-law told me about that is a favorite of hers. it is from a local kansas city vegetarian cafe called eden alley.
BETTY BAILEY BERRY
mixed greens, cous cous, grannysmith apples, baby beets, mandarin oranges, dried cranberries, feta cheese, red onions, candied walnuts and poppyseed dressing.
both of these salads are so easy to make at home and are festive for the season...
